Ingredients

  • Bomba rice - 150 grams
  • Chicken breast - 150 grams, diced
  • Chorizo - 50 grams, sliced
  • Green bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Tomato - 1 medium, diced
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Saffron - a pinch
  • Eggs - 2 large
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the diced chicken and chorizo to the skillet, cooking until the chicken is browned.
  3. Stir in the diced green bell pepper and tomato, followed by the paprika and saffron. Cook for about 5 minutes until vegetables soften.
  4. Add the Bomba rice to the skillet, stirring to coat the rice with the mixture for about 2 minutes.
  5. Pour in the chicken broth, season with salt and black pepper, and bring to a simmer. Cover and cook for 15 minutes on low heat until the rice absorbs most of the liquid.
  6. Preheat the oven to 200°C (390°F).
  7. In a bowl, beat the eggs and season with a pinch of salt and pepper.
  8. Once the rice is cooked, pour the beaten eggs over the top of the rice in the skillet, spreading evenly.
  9. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the egg is set and golden brown on top.
  10. Remove from the oven, garnish with fresh parsley, and serve hot.
