Ingredients
- Bomba rice - 150 grams
- Chicken breast - 150 grams, diced
- Chorizo - 50 grams, sliced
- Green bell pepper - 1 small, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Tomato - 1 medium, diced
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Saffron - a pinch
- Eggs - 2 large
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the diced chicken and chorizo to the skillet, cooking until the chicken is browned.
- Stir in the diced green bell pepper and tomato, followed by the paprika and saffron. Cook for about 5 minutes until vegetables soften.
- Add the Bomba rice to the skillet, stirring to coat the rice with the mixture for about 2 minutes.
- Pour in the chicken broth, season with salt and black pepper, and bring to a simmer. Cover and cook for 15 minutes on low heat until the rice absorbs most of the liquid.
- Preheat the oven to 200°C (390°F).
- In a bowl, beat the eggs and season with a pinch of salt and pepper.
- Once the rice is cooked, pour the beaten eggs over the top of the rice in the skillet, spreading evenly.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the egg is set and golden brown on top.
- Remove from the oven, garnish with fresh parsley, and serve hot.
