- Pork ribs - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Basmati rice - 150 grams
- Chicken broth - 500 milliliters
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the pork ribs and brown them on all sides for about 5-7 minutes.
- Remove the ribs from the skillet and set them aside. In the same skillet, add the chopped onion and garlic, cooking until the onion is translucent.
- Add the diced red bell pepper and tomato to the skillet, stirring for another 3-4 minutes until they soften.
- Stir in the paprika, cumin, salt, and black pepper, mixing well to combine the spices with the vegetables.
- Return the browned pork ribs to the skillet and add the basmati rice, stirring to coat the rice with the mixture.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
- Once cooked, fluff the rice with a fork and let it rest for a few minutes. Serve hot, garnished with fresh parsley.
