  • Pork ribs - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Basmati rice - 150 grams
  • Chicken broth - 500 milliliters
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the pork ribs and brown them on all sides for about 5-7 minutes.
  2. Remove the ribs from the skillet and set them aside. In the same skillet, add the chopped onion and garlic, cooking until the onion is translucent.
  3. Add the diced red bell pepper and tomato to the skillet, stirring for another 3-4 minutes until they soften.
  4. Stir in the paprika, cumin, salt, and black pepper, mixing well to combine the spices with the vegetables.
  5. Return the browned pork ribs to the skillet and add the basmati rice, stirring to coat the rice with the mixture.
  6. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Once cooked, fluff the rice with a fork and let it rest for a few minutes. Serve hot, garnished with fresh parsley.
