Ingredients

  • Rabbit meat (boneless, cut into pieces) - 300 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Bell pepper (diced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Saffron threads - 1/4 teaspoon
  • Rice (short-grain, such as Bomba) - 150 grams
  • Chicken broth - 500 ml
  • Green peas (fresh or frozen) - 100 grams
  • Rosemary (fresh, chopped) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon wedges - for serving

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the rabbit pieces and sauté until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the chopped onion and bell pepper. Cook until softened, about 5 minutes, then add the minced garlic and cook for an additional minute.
  3. Add the chopped tomato and cook until it breaks down, about 3 minutes. Stir in the saffron threads and cook for another minute.
  4. Add the rice to the skillet, stirring well to coat it in the vegetable mixture. Cook for 2 minutes to toast the rice slightly.
  5. Pour in the chicken broth and return the rabbit to the skillet. Season with salt, black pepper, and chopped rosemary. Bring to a boil, then reduce the heat to low.
  6. Cover the skillet and let it simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid. In the last 5 minutes of cooking, stir in the green peas.
  7. Once done, remove from heat and let it sit covered for an additional 5 minutes. Serve hot with lemon wedges on the side.
