- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Bell pepper (diced) - 1 medium
- Tomato (chopped) - 1 medium
- Saffron threads - 1/4 teaspoon
- Rice (short-grain, such as Bomba) - 150 grams
- Chicken broth - 500 ml
- Green peas (fresh or frozen) - 100 grams
- Rosemary (fresh, chopped) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon wedges - for serving
Steps
- Heat the olive oil in a large skillet over medium heat. Add the rabbit pieces and sauté until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the chopped onion and bell pepper. Cook until softened, about 5 minutes, then add the minced garlic and cook for an additional minute.
- Add the chopped tomato and cook until it breaks down, about 3 minutes. Stir in the saffron threads and cook for another minute.
- Add the rice to the skillet, stirring well to coat it in the vegetable mixture. Cook for 2 minutes to toast the rice slightly.
- Pour in the chicken broth and return the rabbit to the skillet. Season with salt, black pepper, and chopped rosemary. Bring to a boil, then reduce the heat to low.
- Cover the skillet and let it simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid. In the last 5 minutes of cooking, stir in the green peas.
- Once done, remove from heat and let it sit covered for an additional 5 minutes. Serve hot with lemon wedges on the side.
