Ingredients

  • Basmati rice - 150 grams
  • Coconut milk - 300 milliliters
  • Water - 150 milliliters
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cilantro - 1 tablespoon, chopped
  • Vegetable broth - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and cook for an additional 2 minutes, until slightly softened.
  4. Add the rinsed rice to the saucepan, stirring to coat the grains in the oil and aromatics. Toast the rice for about 2 minutes.
  5. Pour in the coconut milk and water, then add the vegetable broth, cumin, turmeric, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a gentle boil, then reduce the heat to low and cover the saucepan. Simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Once cooked, remove from heat and fluff the rice with a fork. Stir in the green peas and chopped cilantro, letting them warm through for a couple of minutes.
  8. Serve hot, garnished with additional cilantro if desired.
