- Brown rice - 150 grams
- Spanish chorizo (lean) - 100 grams, sliced
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Green peas - 50 grams, frozen or fresh
- Vegetable broth - 400 milliliters
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the sliced chorizo and sauté for 3-4 minutes until browned and slightly crispy.
- Add the diced onion and garlic to the pan. Cook for an additional 2-3 minutes until the onion is translucent.
- Stir in the diced red bell pepper and continue cooking for another 2 minutes.
- Add the brown rice to the pan, stirring to coat it in the oil and flavors. Cook for 1-2 minutes, allowing the rice to toast slightly.
- Pour in the vegetable broth, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, stir in the green peas.
- Once cooked, remove from heat and let it sit for a couple of minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
