Ingredients

  • White rice - 200 grams
  • Chicharrones (crispy pork cracklings) - 100 grams
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Green peas - 50 grams
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
  2. Stir in the diced red bell pepper and cook for an additional 3 minutes until softened.
  3. Add the white rice to the saucepan, stirring well to coat the rice with the oil and vegetables. Cook for about 2 minutes until the rice is slightly toasted.
  4. Pour in the chicken broth, and add the paprika, saffron, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pan, and allow the rice to simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, in a separate pan, heat the chicharrones until they are crispy, then set aside.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the green peas and crispy chicharrones.
  8. Serve hot, garnished with fresh parsley.
