  • Fresh green peas - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2, diced
  • Tomato - 1 medium, diced
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a saucepan, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced bell pepper and tomato to the pan, cooking for another 5 minutes until softened.
  4. Stir in the drained rice, paprika, saffron, salt, and black pepper, mixing well to coat the rice with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, add the fresh green peas, cover again, and cook for an additional 5 minutes or until the rice is fluffy and all the liquid is absorbed.
  7. Remove from heat, let it sit covered for 5 minutes, then fluff the rice with a fork and garnish with fresh parsley before serving.
