- Vegetable broth - 400 ml

- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, diced
- Tomato - 1 medium, diced
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a saucepan, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced bell pepper and tomato to the pan, cooking for another 5 minutes until softened.
- Stir in the drained rice, paprika, saffron, salt, and black pepper, mixing well to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the fresh green peas, cover again, and cook for an additional 5 minutes or until the rice is fluffy and all the liquid is absorbed.
- Remove from heat, let it sit covered for 5 minutes, then fluff the rice with a fork and garnish with fresh parsley before serving.
