- Basmati rice - 150g
- Crab meat (cooked and shredded) - 200g
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Bell pepper (diced) - 1 small
- Tomato (finely chopped) - 1 medium
- Chicken broth (Halal) - 400ml
- Paprika - 1 teaspoon
- Saffron strands - a pinch
- Peas (frozen) - 50g
- Salt - to taste
- Black pepper - to taste
- Lemon wedges - for serving
- Fresh parsley (chopped) - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat the olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper to the pan and cook for an additional 2-3 minutes until fragrant.
- Stir in the chopped tomato, paprika, saffron, salt, and black pepper. Cook for another 5 minutes until the mixture thickens slightly.
- Drain the soaked rice and add it to the pan, stirring to coat the rice with the spice mixture.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the crab meat and frozen peas, gently folding them into the rice. Cover and cook for another 5 minutes.
- Remove from heat and let it sit covered for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, garnish with chopped parsley, and serve with lemon wedges on the side.
