Ingredients

  • Basmati rice - 150g
  • Crab meat (cooked and shredded) - 200g
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Bell pepper (diced) - 1 small
  • Tomato (finely chopped) - 1 medium
  • Chicken broth (Halal) - 400ml
  • Paprika - 1 teaspoon
  • Saffron strands - a pinch
  • Peas (frozen) - 50g
  • Salt - to taste
  • Black pepper - to taste
  • Lemon wedges - for serving
  • Fresh parsley (chopped) - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the olive oil over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced bell pepper to the pan and cook for an additional 2-3 minutes until fragrant.
  4. Stir in the chopped tomato, paprika, saffron, salt, and black pepper. Cook for another 5 minutes until the mixture thickens slightly.
  5. Drain the soaked rice and add it to the pan, stirring to coat the rice with the spice mixture.
  6. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the crab meat and frozen peas, gently folding them into the rice. Cover and cook for another 5 minutes.
  8. Remove from heat and let it sit covered for an additional 5 minutes to allow the flavors to meld.
  9. Fluff the rice with a fork, garnish with chopped parsley, and serve with lemon wedges on the side.
