  • Red bell pepper - 1, diced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and garlic, sauté for 3-4 minutes until softened.
  3. Stir in the diced red bell pepper and cook for an additional 3 minutes.
  4. Add the Arborio rice to the saucepan, stirring well to coat the rice with the oil and vegetables.
  5. Pour in the vegetable broth, add paprika, salt, and black pepper; bring to a boil.
  6. Reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, until the rice is almost tender.
  7. Stir in the diced zucchini and continue to cook for another 5 minutes, or until the rice is fully cooked and the zucchini is tender.
  8. Remove from heat, stir in fresh parsley, and let the dish sit covered for 2 minutes before serving.
