- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and garlic, sauté for 3-4 minutes until softened.
- Stir in the diced red bell pepper and cook for an additional 3 minutes.
- Add the Arborio rice to the saucepan, stirring well to coat the rice with the oil and vegetables.
- Pour in the vegetable broth, add paprika, salt, and black pepper; bring to a boil.
- Reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, until the rice is almost tender.
- Stir in the diced zucchini and continue to cook for another 5 minutes, or until the rice is fully cooked and the zucchini is tender.
- Remove from heat, stir in fresh parsley, and let the dish sit covered for 2 minutes before serving.
