Ingredients

  • Bomba rice - 200 grams
  • Lobster (live or cooked) - 400 grams
  • Fish stock - 500 ml
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Tomato - 1 large, diced
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until softened.
  3. Stir in the diced tomato, paprika, saffron, salt, and pepper. Cook for 5 minutes until the tomato breaks down and the mixture thickens.
  4. Add the Bomba rice to the pot and stir to coat the grains with the mixture, cooking for 2 minutes.
  5. Pour in the fish stock and bring to a gentle simmer. Place the lobster on top of the rice, cover, and cook for 20-25 minutes until the rice is tender and has absorbed most of the liquid.
  6. Remove from heat and let it sit covered for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
