  • Eggplant - 1 medium (about 250 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Onion - 1 small (about 100 grams)
  • Garlic - 2 cloves
  • Tomato - 1 large (about 200 grams)
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. While the rice is soaking, dice the eggplant, red bell pepper, onion, and tomato, and mince the garlic.
  3. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  4. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3 minutes until softened.
  5. Stir in the diced eggplant, paprika, cumin, salt, and pepper. Cook for about 7-10 minutes, stirring occasionally, until the eggplant is tender.
  6. Add the diced tomato and cook for another 2 minutes until it breaks down slightly.
  7. Drain the soaked rice and add it to the skillet, stirring to combine with the vegetables.
  8. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and has absorbed the liquid.
  9. Once done, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  10. Serve warm, garnished with fresh parsley if desired.
