- Garlic - 2 cloves
- Tomato - 1 large (about 200 grams)
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- While the rice is soaking, dice the eggplant, red bell pepper, onion, and tomato, and mince the garlic.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 3 minutes until softened.
- Stir in the diced eggplant, paprika, cumin, salt, and pepper. Cook for about 7-10 minutes, stirring occasionally, until the eggplant is tender.
- Add the diced tomato and cook for another 2 minutes until it breaks down slightly.
- Drain the soaked rice and add it to the skillet, stirring to combine with the vegetables.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and has absorbed the liquid.
- Once done, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- Serve warm, garnished with fresh parsley if desired.
