  • Salted cod (bacalao) - 200 grams

  • Red bell pepper - 1, diced
  • Tomato - 1 medium, chopped
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Vegetable broth - 400 ml
  • Frozen peas - 50 grams
  • Fresh parsley - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the salted cod in water for 24 hours, changing the water two or three times to remove excess salt. Drain and flake the cod into bite-sized pieces.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until translucent.
  3. Add the diced red bell pepper and chopped tomato to the pan, cooking for an additional 5 minutes until softened.
  4. Stir in the paprika and saffron, allowing the flavors to meld for 1 minute.
  5. Add the basmati rice to the pan, stirring well to coat the grains with the oil and spices.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover the pan, and simmer for 15 minutes.
  7. After 15 minutes, add the flaked bacalao and frozen peas, and season with salt and black pepper. Stir gently, cover, and cook for another 5-10 minutes until the rice is tender and the liquid is absorbed.
  8. Remove from heat, let it rest for a few minutes, then fluff the rice with a fork. Garnish with chopped parsley before serving.
