- Saffron threads - a pinch
- Vegetable broth - 400 ml
- Frozen peas - 50 grams
- Fresh parsley - a handful, chopped
- Salt - to taste

Steps
- Soak the salted cod in water for 24 hours, changing the water two or three times to remove excess salt. Drain and flake the cod into bite-sized pieces.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until translucent.
- Add the diced red bell pepper and chopped tomato to the pan, cooking for an additional 5 minutes until softened.
- Stir in the paprika and saffron, allowing the flavors to meld for 1 minute.
- Add the basmati rice to the pan, stirring well to coat the grains with the oil and spices.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover the pan, and simmer for 15 minutes.
- After 15 minutes, add the flaked bacalao and frozen peas, and season with salt and black pepper. Stir gently, cover, and cook for another 5-10 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat, let it rest for a few minutes, then fluff the rice with a fork. Garnish with chopped parsley before serving.
