Ingredients

  • Basmati rice - 150 grams
  • Canned alubias (white beans) - 200 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - a handful, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced red bell pepper, cooking for an additional 3 minutes until softened.
  3. Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for 2-3 minutes until the tomatoes start to break down.
  4. Add the rinsed basmati rice to the pan, stirring well to coat the rice with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, remove the lid and gently fold in the drained alubias. Cover again and cook for another 5 minutes until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes before serving. Fluff the rice with a fork and garnish with fresh parsley.
