- Basmati rice - 150 grams
- Canned alubias (white beans) - 200 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - a handful, chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper, cooking for an additional 3 minutes until softened.
- Stir in the diced tomato, paprika, cumin, salt, and black pepper. Cook for 2-3 minutes until the tomatoes start to break down.
- Add the rinsed basmati rice to the pan, stirring well to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, remove the lid and gently fold in the drained alubias. Cover again and cook for another 5 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes before serving. Fluff the rice with a fork and garnish with fresh parsley.
