- Canned jackfruit in brine - 150 grams, shredded
- Sun-dried tomatoes - 50 grams, chopped
- Garlic - 4 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the Arborio rice to the pan and toast for 2-3 minutes, stirring frequently until the rice is slightly translucent.
- Pour in the vegetable broth and bring to a simmer. Add the smoked paprika, saffron, salt, and black pepper. Stir well.
- Incorporate the chopped artichoke hearts and shredded jackfruit into the rice mixture.
- Cover the saucepan with a lid, reduce the heat to low, and let simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
- When done, remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Serve hot, garnished with fresh parsley and additional black pepper if desired.
