  • Canned artichoke hearts - 100 grams, drained and chopped
  • Canned jackfruit in brine - 150 grams, shredded
  • Sun-dried tomatoes - 50 grams, chopped
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the Arborio rice to the pan and toast for 2-3 minutes, stirring frequently until the rice is slightly translucent.
  4. Pour in the vegetable broth and bring to a simmer. Add the smoked paprika, saffron, salt, and black pepper. Stir well.
  5. Incorporate the chopped artichoke hearts and shredded jackfruit into the rice mixture.
  6. Cover the saucepan with a lid, reduce the heat to low, and let simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  7. When done, remove from heat and let it sit for 5 minutes before fluffing with a fork.
  8. Serve hot, garnished with fresh parsley and additional black pepper if desired.
