Ingredients

  • Arborio rice - 150 grams
  • Artichoke hearts (canned or frozen) - 200 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1 small
  • Saffron threads - a pinch
  • Paprika (smoked) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Heat the olive oil in a medium-sized pan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and diced red bell pepper, cooking for another 3 minutes until softened.
  4. Add the Arborio rice to the pan, stirring to coat the grains with the oil and vegetables, cooking for about 2 minutes.
  5. Dissolve the saffron in a small amount of warm vegetable broth and add it to the pan along with the smoked paprika, salt, and black pepper.
  6. Pour in the remaining vegetable broth and bring to a gentle boil.
  7. Once boiling, reduce the heat to low and add the artichoke hearts, stirring gently to distribute them in the rice.
  8. Cover the pan and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
  9. Remove from heat and let it sit, covered, for an additional 5 minutes.
  10. Fluff the rice with a fork, garnish with chopped fresh parsley, and serve warm.
