- Vegetable broth - 500 ml

- Garlic (minced) - 2 cloves
- Red bell pepper (diced) - 1 small
- Saffron threads - a pinch
- Paprika (smoked) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Heat the olive oil in a medium-sized pan over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for another 3 minutes until softened.
- Add the Arborio rice to the pan, stirring to coat the grains with the oil and vegetables, cooking for about 2 minutes.
- Dissolve the saffron in a small amount of warm vegetable broth and add it to the pan along with the smoked paprika, salt, and black pepper.
- Pour in the remaining vegetable broth and bring to a gentle boil.
- Once boiling, reduce the heat to low and add the artichoke hearts, stirring gently to distribute them in the rice.
- Cover the pan and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped fresh parsley, and serve warm.
