  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 large, diced
  • Brown rice - 150 grams
  • Vegetable broth - 700 milliliters
  • Chickpeas - 100 grams, cooked
  • Paprika - 1 teaspoon
  • Saffron - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet or saucepan over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced red bell pepper, zucchini, and carrot to the pan and cook for 5-7 minutes until they begin to soften.
  5. Mix in the diced tomato, brown rice, paprika, and saffron, stirring to combine.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and most of the liquid is absorbed.
  8. Stir in the cooked chickpeas and season with salt and black pepper to taste.
  9. Let it sit for a few minutes off the heat before serving.
  10. Garnish with fresh parsley before serving.
