- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Tomato - 1 large, diced
- Brown rice - 150 grams
- Vegetable broth - 700 milliliters
- Chickpeas - 100 grams, cooked
- Paprika - 1 teaspoon
- Saffron - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet or saucepan over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced red bell pepper, zucchini, and carrot to the pan and cook for 5-7 minutes until they begin to soften.
- Mix in the diced tomato, brown rice, paprika, and saffron, stirring to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 25 minutes, or until the rice is tender and most of the liquid is absorbed.
- Stir in the cooked chickpeas and season with salt and black pepper to taste.
- Let it sit for a few minutes off the heat before serving.
- Garnish with fresh parsley before serving.
