  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Zucchini - 1, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 large, diced
  • Saffron threads - 1 pinch
  • Paprika - 1 teaspoon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced red and green bell peppers, zucchini, and tomato to the pan. Cook for about 5-7 minutes until the vegetables soften.
  4. Stir in the basmati rice, saffron, paprika, salt, and black pepper. Mix well to coat the rice with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for 5 minutes.
  6. Transfer the rice mixture to a baking dish, spreading it evenly. Top with cooked chickpeas and drizzle with the remaining tablespoon of olive oil.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. After 25 minutes, remove the foil and bake for an additional 5-10 minutes until the rice is fully cooked and slightly crispy on top.
  9. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
