- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Zucchini - 1, diced
- Garlic - 2 cloves, minced
- Tomato - 1 large, diced
- Saffron threads - 1 pinch
- Paprika - 1 teaspoon
- Chickpeas - 100 grams, cooked
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (390°F).
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the diced red and green bell peppers, zucchini, and tomato to the pan. Cook for about 5-7 minutes until the vegetables soften.
- Stir in the basmati rice, saffron, paprika, salt, and black pepper. Mix well to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer for 5 minutes.
- Transfer the rice mixture to a baking dish, spreading it evenly. Top with cooked chickpeas and drizzle with the remaining tablespoon of olive oil.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 5-10 minutes until the rice is fully cooked and slightly crispy on top.
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley.
