  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  2. Add the diced red and green bell peppers, diced carrot, and cook for another 5 minutes until the vegetables soften.
  3. Stir in the diced tomato, paprika, saffron, salt, and black pepper, cooking for an additional 2 minutes.
  4. Add the basmati rice to the saucepan, stirring to coat the rice with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. In the last 5 minutes of cooking, add the green peas to the rice, gently folding them in.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. Garnish with fresh parsley before serving.
