- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced red and green bell peppers, diced carrot, and cook for another 5 minutes until the vegetables soften.
- Stir in the diced tomato, paprika, saffron, salt, and black pepper, cooking for an additional 2 minutes.
- Add the basmati rice to the saucepan, stirring to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- In the last 5 minutes of cooking, add the green peas to the rice, gently folding them in.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh parsley before serving.
