  • Chicken breast - 150 grams, diced
  • Chorizo - 100 grams, sliced
  • Red bell pepper - 1, diced
  • Green peas - 100 grams, frozen or fresh
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 400 milliliters
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast and chorizo, cooking until browned, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Add the diced red bell pepper and cook for another 2 minutes.
  5. Stir in the tomato paste and paprika, mixing well to combine all ingredients.
  6. Add the basmati rice to the skillet, stirring to coat the rice with the mixture.
  7. Pour in the chicken broth, season with salt and black pepper, and bring to a boil.
  8. Once boiling, reduce heat to low, cover, and let simmer for 15 minutes.
  9. After 15 minutes, stir in the green peas, cover again, and cook for an additional 5 minutes.
  10. Remove from heat and let it sit covered for 5 minutes before serving.
