- Green peas - 100 grams, frozen or fresh
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 400 milliliters
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breast and chorizo, cooking until browned, about 5-7 minutes.
- Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and cook for another 2 minutes.
- Stir in the tomato paste and paprika, mixing well to combine all ingredients.
- Add the basmati rice to the skillet, stirring to coat the rice with the mixture.
- Pour in the chicken broth, season with salt and black pepper, and bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 15 minutes.
- After 15 minutes, stir in the green peas, cover again, and cook for an additional 5 minutes.
- Remove from heat and let it sit covered for 5 minutes before serving.
- Garnish with fresh parsley and enjoy your Arroz a la Riojana!
