  • Tomato - 1 large, diced
  • Fish stock - 500 ml
  • Saffron threads - a pinch
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Mixed seafood (shrimp, mussels, calamari) - 250 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes.
  4. Add the diced tomato and cook until softened, about 3 more minutes.
  5. Stir in the Arborio rice, allowing it to toast for 1-2 minutes.
  6. Pour in the fish stock, add the saffron, paprika, salt, and black pepper, and bring to a simmer.
  7. Cover the pan and cook for 15 minutes until the rice is tender and most of the liquid is absorbed.
  8. In the last 5 minutes of cooking, add the mixed seafood to the pan, gently stirring to combine.
  9. Once cooked, remove from heat and let it sit covered for 5 minutes.
  10. Serve hot, garnished with fresh parsley and lemon wedges.
