- Saffron threads - a pinch
- Paprika - 1 teaspoon

- Mixed seafood (shrimp, mussels, calamari) - 250 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes.
- Add the diced tomato and cook until softened, about 3 more minutes.
- Stir in the Arborio rice, allowing it to toast for 1-2 minutes.
- Pour in the fish stock, add the saffron, paprika, salt, and black pepper, and bring to a simmer.
- Cover the pan and cook for 15 minutes until the rice is tender and most of the liquid is absorbed.
- In the last 5 minutes of cooking, add the mixed seafood to the pan, gently stirring to combine.
- Once cooked, remove from heat and let it sit covered for 5 minutes.
- Serve hot, garnished with fresh parsley and lemon wedges.
