  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the diced red and green bell peppers, zucchini, and carrot to the saucepan. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the Arborio rice and cook for 1-2 minutes until the rice is slightly translucent.
  4. Add the vegetable broth, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  5. Let it simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir in the green peas during the last 5 minutes of cooking.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
