- Arborio rice - 150 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced red and green bell peppers, zucchini, and carrot to the saucepan. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the Arborio rice and cook for 1-2 minutes until the rice is slightly translucent.
- Add the vegetable broth, paprika, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
- Let it simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir in the green peas during the last 5 minutes of cooking.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
