Ingredients

  • Cornmeal (masa arepa) - 1 cup
  • Water - 1 cup
  • Salt - 1/2 teaspoon
  • Avocado - 1 medium, ripe
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the cornmeal, water, and salt. Mix until a dough forms and let it rest for 5 minutes.
  2. Divide the dough into 4 equal portions and shape each portion into a round patty, about 1/2 inch thick.
  3. Heat a non-stick skillet or griddle over medium heat and add the olive oil.
  4. Once the skillet is hot, place the arepas in the skillet. Cook for about 5-7 minutes on each side, or until they develop a golden-brown crust.
  5. While the arepas are cooking, mash the avocado in a bowl and mix in lime juice, chopped cilantro, and black pepper to taste.
  6. Once the arepas are done, remove them from the skillet and let them cool slightly.
  7. Slice the arepas open and generously fill them with the avocado mixture. Serve warm.
