  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Vegetable broth - 150 milliliters
  • Smoked paprika - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent.
  3. Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for about 5-7 minutes until the vegetables soften.

  5. Add the canned white beans (drained and rinsed) and vegetable broth to the skillet. Stir gently to mix everything together.
