- Vegetable broth - 150 milliliters
- Smoked paprika - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion becomes translucent.
- Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for about 5-7 minutes until the vegetables soften.
- Stir in the tomato paste, smoked paprika, oregano, salt, and black pepper, mixing well to combine.
- Add the canned white beans (drained and rinsed) and vegetable broth to the skillet. Stir gently to mix everything together.
- Transfer the mixture to a baking dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the top is slightly golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
