Ingredients

  • White beans (cooked) - 400 grams

  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 300 ml
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Cook for an additional 5-7 minutes until the vegetables are tender.
  3. Stir in the chopped tomato, paprika, cumin, salt, and black pepper. Cook for 2-3 minutes until the tomato softens.
  4. Add the cooked white beans and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes, stirring occasionally.
  5. Taste and adjust seasoning if necessary. Remove from heat and let cool slightly.
  6. Serve hot, garnished with fresh parsley.
