- White beans (cooked) - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 300 ml
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the chopped tomato, paprika, cumin, salt, and black pepper. Cook for 2-3 minutes until the tomato softens.
- Add the cooked white beans and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Remove from heat and let cool slightly.
- Serve hot, garnished with fresh parsley.
