  • Garlic - 3 cloves, minced
  • Shallot - 1, finely chopped
  • Tomato paste - 1 tablespoon
  • White wine - 100 ml
  • Vegetable broth - 200 ml
  • Smoked paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Seaweed (dried, e.g., nori) - 1 sheet, crumbled
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Clean the king oyster mushrooms and slice them into thick rounds to resemble clams.
  2. In a medium saucepan, heat the olive oil over medium heat and add the minced garlic and chopped shallot. Sauté for 3-4 minutes until translucent.
  3. Stir in the tomato paste and cook for an additional 1-2 minutes to deepen the flavor.
  4. Add the sliced mushrooms to the pan and sauté for about 5 minutes until they start to soften.
  5. Pour in the white wine and let it simmer for 2-3 minutes until the alcohol evaporates.
  6. Add the vegetable broth, smoked paprika, crumbled seaweed, salt, and pepper. Bring to a gentle boil and then reduce the heat to low. Simmer for 10 minutes.
  7. Stir in the lemon juice and chopped parsley just before serving.
