- Fresh clams - 500 grams

- Onion - 1 medium, finely chopped
- Tomatoes - 2 medium, diced
- White wine - 100 ml
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, cut into wedges
Steps
- Rinse the clams under cold water to remove any sand and grit. Soak them in fresh water for about 20 minutes if needed.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced tomatoes and paprika, and cook for about 5 minutes until the tomatoes start breaking down.
- Pour in the white wine and bring the mixture to a simmer. Let it cook for 3-4 minutes.
- Add the rinsed clams to the skillet, cover, and cook for about 5-7 minutes or until the clams open up. Discard any clams that do not open.
- Remove from heat and stir in the chopped parsley. Season with salt and black pepper to taste.
- Serve hot, garnished with lemon wedges for squeezing.
