Ingredients

  • Fresh clams - 500 grams

  • Tomatoes - 2 medium, diced
  • White wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, cut into wedges

Steps

  1. Rinse the clams under cold water to remove any sand and grit. Soak them in fresh water for about 20 minutes if needed.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the diced tomatoes and paprika, and cook for about 5 minutes until the tomatoes start breaking down.
  5. Pour in the white wine and bring the mixture to a simmer. Let it cook for 3-4 minutes.
  6. Add the rinsed clams to the skillet, cover, and cook for about 5-7 minutes or until the clams open up. Discard any clams that do not open.
  7. Remove from heat and stir in the chopped parsley. Season with salt and black pepper to taste.
  8. Serve hot, garnished with lemon wedges for squeezing.
