- Egg yolk - 1 large
- Vanilla extract - 1 teaspoon
- Dulce de leche - 100 grams
- Cocoa powder - 1 tablespoon (optional for dusting)
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, powdered sugar, and a pinch of salt.
- Add the softened butter, egg yolk, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Divide the dough into small balls, about 20 grams each, and flatten them slightly to form discs.
- Place the discs on the prepared baking sheet, leaving space between them. Bake for 10-12 minutes, until they are lightly golden.
- Remove the cookies from the oven and allow them to cool completely on a wire rack.
- Once cooled, spread a generous amount of dulce de leche on the flat side of one cookie, and sandwich it with another cookie.
- If desired, dust the tops with cocoa powder before serving.
