  • Vanilla extract - 1 teaspoon
  • Dulce de leche - 100 grams
  • Cocoa powder - 1 tablespoon (optional for dusting)
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, powdered sugar, and a pinch of salt.
  3. Add the softened butter, egg yolk, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Divide the dough into small balls, about 20 grams each, and flatten them slightly to form discs.
  5. Place the discs on the prepared baking sheet, leaving space between them. Bake for 10-12 minutes, until they are lightly golden.
  6. Remove the cookies from the oven and allow them to cool completely on a wire rack.
  7. Once cooled, spread a generous amount of dulce de leche on the flat side of one cookie, and sandwich it with another cookie.
  8. If desired, dust the tops with cocoa powder before serving.
