Ingredients

  • Artichokes - 2 large
  • Olive oil - 4 tablespoons
  • Lemon - 1, juiced
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Fill a large bowl with water and add the juice of half a lemon. Set aside.
  2. Trim the artichokes by removing the tough outer leaves, cutting off the top third, and trimming the stem. Place them in the lemon water to prevent browning.
  3. In a small bowl, mix olive oil, minced garlic, salt, and black pepper.
  4. Remove the artichokes from the water, pat dry, and slice them in half lengthwise.
  5. Brush the cut sides of the artichokes with the olive oil mixture.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Place the artichoke halves cut side down on the grill. Cook for 5-7 minutes until grill marks appear.
  8. Flip the artichokes and cook for an additional 5 minutes until tender.
  9. Remove from the grill and drizzle with remaining lemon juice and sprinkle with chopped parsley before serving.
