Ingredients

  • Zucchini - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
  2. In a mixing bowl, combine the grated zucchini, almond flour, egg, crumbled feta cheese, chopped parsley, cumin, coriander, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Take a tablespoon of the mixture and form it into a small patty. Repeat with the remaining mixture.
  5. Carefully place the patties in the hot skillet, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
