- Zucchini - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
- In a mixing bowl, combine the grated zucchini, almond flour, egg, crumbled feta cheese, chopped parsley, cumin, coriander, garlic powder, salt, and black pepper. Mix until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Take a tablespoon of the mixture and form it into a small patty. Repeat with the remaining mixture.
- Carefully place the patties in the hot skillet, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
