Ingredients

  • Zucchini - 200 grams, grated
  • Canned chickpeas - 240 grams, drained and rinsed
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 60 grams
  • Olive oil - 2 tablespoons
  • Whole grain burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon

Steps

  1. Grate the zucchini and place it in a clean kitchen towel, squeezing out excess moisture.
  2. In a large bowl, mash the drained chickpeas with a fork or a potato masher until mostly smooth, leaving some texture.
  3. Add the grated zucchini, chopped red onion, minced garlic, chopped cilantro, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix well.
  4. Stir in the chickpea flour until the mixture holds together. If too wet, add a little more flour.
  5. Form the mixture into two burger patties.
  6. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  7. While the burgers are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth and creamy.
  8. Toast the whole grain burger buns lightly in the skillet or oven.
  9. Assemble the burgers by placing each patty on a bun and drizzling the tahini sauce on top. Add any additional toppings like lettuce or tomato, if desired.
