- Zucchini - 200 grams, grated
- Canned chickpeas - 240 grams, drained and rinsed
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 60 grams
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
Steps
- Grate the zucchini and place it in a clean kitchen towel, squeezing out excess moisture.
- In a large bowl, mash the drained chickpeas with a fork or a potato masher until mostly smooth, leaving some texture.
- Add the grated zucchini, chopped red onion, minced garlic, chopped cilantro, cumin, coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix well.
- Stir in the chickpea flour until the mixture holds together. If too wet, add a little more flour.
- Form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- While the burgers are cooking, prepare the tahini sauce by mixing tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth and creamy.
- Toast the whole grain burger buns lightly in the skillet or oven.
- Assemble the burgers by placing each patty on a bun and drizzling the tahini sauce on top. Add any additional toppings like lettuce or tomato, if desired.
