Ingredients
- Semolina - 100 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Chopped onion - 1 small
- Garlic - 2 cloves, minced
- Chili powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Stir in the cumin, coriander, chili powder, and black pepper, cooking for an additional minute until fragrant.
- Add the semolina and salt to the saucepan, stirring continuously for about 2 minutes to toast the semolina lightly.
- Gradually add the water while stirring to prevent lumps from forming, and bring the mixture to a boil.
- Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 10-12 minutes, or until the semolina absorbs all the water and becomes a thick, fluffy mixture.
- Remove the saucepan from heat and stir in the chopped parsley and remaining tablespoon of olive oil. Allow it to cool slightly.
- Once cool enough to handle, shape the semolina mixture into small patties or balls.
- Heat a non-stick skillet over medium heat and lightly grease it. Cook the zriga patties for about 3-4 minutes on each side until they are golden brown and crispy.
- Serve warm with a dipping sauce of your choice or enjoy them plain.
