- Green olives - 200 grams
- Black olives - 100 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon zest - 1 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- Rinse the green and black olives under cold water to remove excess brine and drain them well.
- In a mixing bowl, combine the minced garlic, chopped parsley, chopped cilantro, lemon zest, lemon juice, olive oil, cumin powder, paprika, salt, black pepper, and red chili flakes if using.
- Add the rinsed olives to the bowl and toss well to coat them evenly with the marinade.
- Cover the bowl with plastic wrap and let the olives marinate in the refrigerator for at least 1 hour to allow the flavors to meld.
- After marinating, transfer the olives to a serving dish and drizzle with additional olive oil if desired. Serve with gluten-free bread or vegetable sticks.
