Ingredients

  • Green olives - 200 grams
  • Black olives - 100 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon zest - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red chili flakes - 1/4 teaspoon (optional)

Steps

  1. Rinse the green and black olives under cold water to remove excess brine and drain them well.
  2. In a mixing bowl, combine the minced garlic, chopped parsley, chopped cilantro, lemon zest, lemon juice, olive oil, cumin powder, paprika, salt, black pepper, and red chili flakes if using.
  3. Add the rinsed olives to the bowl and toss well to coat them evenly with the marinade.
  4. Cover the bowl with plastic wrap and let the olives marinate in the refrigerator for at least 1 hour to allow the flavors to meld.
  5. After marinating, transfer the olives to a serving dish and drizzle with additional olive oil if desired. Serve with gluten-free bread or vegetable sticks.
