Steps

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and diced tomato, cooking for another 2-3 minutes until the tomatoes soften.
  4. Add the sliced green olives, cumin powder, paprika, salt, and black pepper; stir to combine and cook for an additional 3 minutes.
  5. Crack the eggs into the skillet, one at a time, over the olive mixture, cover, and let cook until the whites are set but the yolks remain runny, about 5-7 minutes.
  6. Remove from heat and sprinkle with fresh chopped parsley before serving.
