  • Red onion - 1 small, finely chopped

  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced zucchini and bell pepper, cooking for another 5 minutes until they start to soften.
  4. Add the chopped tomato, cumin, paprika, cinnamon, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Incorporate the halved green olives and mix well, cooking for an additional 5 minutes.
  6. Remove from heat and stir in the fresh parsley and lemon juice.
  7. Serve warm, garnished with additional parsley if desired.
