Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zaatar spice mix - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, diced
  • Red onion - 1 small, thinly sliced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Black olives - 50 grams, pitted and sliced

Steps

  1. In a bowl, mix warm water and yeast, let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth, then cover and let it rise for 30 minutes in a warm place, or until doubled in size.
  4. Preheat your oven to 220°C (425°F).
  5. Once the dough has risen, punch it down and roll it out on a floured surface to about 1 cm thick.
  6. Transfer the rolled dough to a baking sheet lined with parchment paper.
  7. Spread zaatar spice mix evenly over the dough, then layer on cherry tomatoes, bell pepper, red onion, and spinach.
  8. Sprinkle crumbled feta cheese and sliced black olives on top.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the vegetables are tender.
  10. Remove from the oven, allow to cool for a few minutes, then slice and serve warm.
