Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Zaatar spice mix - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 1 medium, diced
- Red onion - 1 small, thinly sliced
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Black olives - 50 grams, pitted and sliced
Steps
- In a bowl, mix warm water and yeast, let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough for about 10 minutes until smooth, then cover and let it rise for 30 minutes in a warm place, or until doubled in size.
- Preheat your oven to 220°C (425°F).
- Once the dough has risen, punch it down and roll it out on a floured surface to about 1 cm thick.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Spread zaatar spice mix evenly over the dough, then layer on cherry tomatoes, bell pepper, red onion, and spinach.
- Sprinkle crumbled feta cheese and sliced black olives on top.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the vegetables are tender.
- Remove from the oven, allow to cool for a few minutes, then slice and serve warm.
