- Sweet potato - 300 grams
- Chickpeas - 1 cup, cooked
- Zaatar spice blend - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1/2, finely chopped
- Cilantro - 1/4 cup, chopped
- Oats - 1/2 cup, ground
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce - 2 leaves
- Tahini - 2 tablespoons (for sauce)
- Lemon juice - 1 tablespoon (for sauce)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potato, then place it on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and black pepper, and roast for 20-25 minutes until tender.
- In a mixing bowl, mash the roasted sweet potato with a fork.
- Add the cooked chickpeas, minced garlic, zaatar spice blend, chopped red onion, cilantro, ground oats, and remaining olive oil to the bowl. Mix well until combined.
- Form the mixture into two burger patties and place them on a parchment-lined baking sheet.
- Bake the patties in the oven for an additional 15 minutes, flipping halfway through until they are golden brown.
- While the patties are baking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add water to achieve the desired consistency.
- Toast the burger buns, then assemble the burgers by placing a patty on each bun, topping with avocado slices, tomato, lettuce, and a drizzle of tahini sauce.
