Ingredients

  • Sweet potato - 300 grams
  • Chickpeas - 1 cup, cooked
  • Zaatar spice blend - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1/2, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Oats - 1/2 cup, ground
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Lettuce - 2 leaves
  • Tahini - 2 tablespoons (for sauce)
  • Lemon juice - 1 tablespoon (for sauce)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potato, then place it on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and black pepper, and roast for 20-25 minutes until tender.
  3. In a mixing bowl, mash the roasted sweet potato with a fork.
  4. Add the cooked chickpeas, minced garlic, zaatar spice blend, chopped red onion, cilantro, ground oats, and remaining olive oil to the bowl. Mix well until combined.
  5. Form the mixture into two burger patties and place them on a parchment-lined baking sheet.
  6. Bake the patties in the oven for an additional 15 minutes, flipping halfway through until they are golden brown.
  7. While the patties are baking, prepare the tahini sauce by mixing tahini and lemon juice in a small bowl. Add water to achieve the desired consistency.
  8. Toast the burger buns, then assemble the burgers by placing a patty on each bun, topping with avocado slices, tomato, lettuce, and a drizzle of tahini sauce.
