- Pizza dough - 200 grams
- Zaatar spice blend - 2 tablespoons

- Red bell pepper - 1, diced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 220°C (428°F) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine the diced red bell pepper, sliced zucchini, sliced red onion, halved cherry tomatoes, minced garlic, olive oil, zaatar, salt, and black pepper. Toss until the vegetables are well coated.
- Spread the vegetable mixture evenly on the prepared baking sheet and roast in the oven for about 15-20 minutes, or until the vegetables are tender and lightly browned.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness. Transfer the rolled-out dough onto a pizza stone or a baking sheet lined with parchment paper.
