Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Zaatar spice blend - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 100 grams, cooked or canned, rinsed
  • Tahini - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a saucepan, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the water is absorbed and the rice is fluffy.
  3. While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the cherry tomatoes, cucumber, red bell pepper, and chickpeas, and sauté for 5-7 minutes until the vegetables are tender. Season with salt and pepper to taste.
  4. In a small bowl, mix the tahini with lemon juice, adding a little water if needed to achieve a drizzling consistency.
  5. Once the rice is cooked, fluff it with a fork and stir in the zaatar spice blend and remaining olive oil.
  6. To assemble the bowls, divide the zaatar rice between two bowls, top with the sautéed vegetables, and drizzle with tahini sauce. Garnish with chopped parsley and serve immediately.
