Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Zaatar spice blend - 2 tablespoons
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 100 grams, cooked or canned, rinsed
- Tahini - 1 tablespoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a saucepan, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the water is absorbed and the rice is fluffy.
- While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the cherry tomatoes, cucumber, red bell pepper, and chickpeas, and sauté for 5-7 minutes until the vegetables are tender. Season with salt and pepper to taste.
- In a small bowl, mix the tahini with lemon juice, adding a little water if needed to achieve a drizzling consistency.
- Once the rice is cooked, fluff it with a fork and stir in the zaatar spice blend and remaining olive oil.
- To assemble the bowls, divide the zaatar rice between two bowls, top with the sautéed vegetables, and drizzle with tahini sauce. Garnish with chopped parsley and serve immediately.
