Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zaatar spice blend - 3 tablespoons
  • Tomato sauce - 100 grams
  • Fresh mozzarella cheese - 150 grams
  • Cherry tomatoes - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Black olives - 50 grams, pitted and sliced

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth.
  4. Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 15-20 minutes until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Roll out the risen dough on a floured surface to your desired thickness, then transfer to a baking sheet lined with parchment paper.
  7. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  8. Sprinkle the zaatar spice blend over the sauce, then add slices of fresh mozzarella cheese, cherry tomatoes, and black olives.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven, sprinkle with chopped parsley, slice, and serve warm.
