Ingredients

  • Whole wheat pita bread - 2 large

  • Zaatar spice mix - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, thinly sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix the olive oil with the zaatar spice mix to create a zaatar oil.
  3. Place the whole wheat pita breads on a baking sheet.
  4. Brush the zaatar oil generously over each pita bread.
  5. Evenly distribute the halved cherry tomatoes, diced red bell pepper, and sliced red onion on top of the pita breads.
  6. Sprinkle the crumbled feta cheese over the vegetables.
  7. Season with salt and black pepper to taste.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
