Ingredients

  • Flatbread - 2 pieces
  • Olive oil - 2 tablespoons
  • Zaatar spice blend - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a small bowl, mix the zaatar spice blend with 2 tablespoons of olive oil to create a paste.
  3. Spread the zaatar paste evenly over each piece of flatbread.
  4. Arrange the halved cherry tomatoes, sliced red bell pepper, and red onion on top of the flatbread.
  5. Sprinkle crumbled feta cheese over the vegetables.
  6. Drizzle with a little more olive oil and season with salt and black pepper to taste.
  7. Place the flatbreads on a baking tray and bake in the preheated oven for about 15 minutes, or until the edges are crispy.
  8. Once out of the oven, sprinkle with fresh parsley and drizzle with lemon juice before serving.
