Ingredients

  • Almond flour - 150 grams
  • Psyllium husk - 15 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 200 ml
  • Olive oil - 2 tablespoons
  • Zaatar spice mix - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. Gradually add water and 1 tablespoon of olive oil to the dry ingredients, mixing until a dough forms.
  4. Knead the dough for a few minutes until smooth, then divide it into two equal portions.
  5. Roll each portion into a flat round shape about 1/2 cm thick and place on the prepared baking sheet.
  6. Brush the tops of the flatbreads with the remaining olive oil and sprinkle generously with zaatar spice.
  7. Top with halved cherry tomatoes and crumbled feta cheese.
  8. Bake in the preheated oven for 15-20 minutes or until the edges are golden and the flatbreads are cooked through.
  9. Remove from the oven, sprinkle with fresh parsley, and let cool for a few minutes before slicing.
