- Almond flour - 150 grams
- Psyllium husk - 15 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 200 ml
- Olive oil - 2 tablespoons
- Zaatar spice mix - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- Gradually add water and 1 tablespoon of olive oil to the dry ingredients, mixing until a dough forms.
- Knead the dough for a few minutes until smooth, then divide it into two equal portions.
- Roll each portion into a flat round shape about 1/2 cm thick and place on the prepared baking sheet.
- Brush the tops of the flatbreads with the remaining olive oil and sprinkle generously with zaatar spice.
- Top with halved cherry tomatoes and crumbled feta cheese.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden and the flatbreads are cooked through.
- Remove from the oven, sprinkle with fresh parsley, and let cool for a few minutes before slicing.
