Ingredients

  • Cauliflower - 300 grams, chopped
  • Chickpeas - 100 grams, canned and drained
  • Zaatar spice mix - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the chopped cauliflower, chickpeas, zaatar, garlic powder, onion powder, olive oil, salt, and black pepper. Mash the mixture until it is well combined but still has some texture.
  3. Add the breadcrumbs to the cauliflower mixture and mix until fully incorporated.
  4. Form the mixture into 2 patties, ensuring they are compact.
  5. Place the patties on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through until golden brown.
  6. While the patties are baking, prepare the tahini sauce by mixing tahini, lemon juice, and a pinch of salt in a small bowl. Add water, a teaspoon at a time, until the desired consistency is reached.
  7. To assemble the burgers, toast the whole wheat burger buns, then layer lettuce, the baked cauliflower patty, sliced tomato, and cucumber on each bun.
  8. Drizzle with tahini sauce and serve immediately.
