Steps
- Preheat the grill to medium-high heat.
- Cut the eggplant into cubes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant and pat dry with paper towels.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the eggplant and cook until softened, about 5-7 minutes.
