Ingredients
- Eggplant - 200 grams
- Tomatoes - 200 grams, diced
- Red bell pepper - 100 grams, diced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Chickpeas - 100 grams, cooked or canned, drained and rinsed
Steps
- Preheat the grill to medium-high heat.
- Slice the eggplant in half lengthwise and score the flesh with a knife. Brush with 1 tablespoon of olive oil, and season with salt and pepper.
- Grill the eggplant for about 10-15 minutes, cut side down, until tender and charred. Remove from the grill and let cool slightly.
- In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic, diced tomatoes, and red bell pepper. Sauté for about 5 minutes until softened.
- Stir in the cumin, paprika, coriander, salt, and black pepper. Cook for another 5 minutes until the mixture thickens.
- Scoop out the flesh of the grilled eggplant and chop it into small pieces. Add the eggplant to the skillet with the tomato mixture and stir in the chickpeas. Cook for an additional 5 minutes.
- Remove from heat, stir in the fresh parsley, and adjust seasoning if necessary.
- Serve warm as a side or main dish, garnished with extra parsley if desired.
