Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Tomatoes - 2 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat.
  4. Roast the cauliflower in the oven for 20 minutes or until golden and tender.
  5. In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
  6. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the diced tomatoes and red bell pepper to the skillet, stirring to combine.
  8. Sprinkle in the cumin and paprika, and cook for another 5 minutes until the vegetables soften.
  9. Once the cauliflower is roasted, add it to the skillet and mix well.
  10. Stir in the chopped cilantro and lemon juice, adjusting seasoning with salt and pepper as needed.
  11. Serve warm, garnished with extra cilantro if desired.
