- Tomatoes - 2 medium, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them on a baking sheet.
- Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat.
- Roast the cauliflower in the oven for 20 minutes or until golden and tender.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced tomatoes and red bell pepper to the skillet, stirring to combine.
- Sprinkle in the cumin and paprika, and cook for another 5 minutes until the vegetables soften.
- Once the cauliflower is roasted, add it to the skillet and mix well.
- Stir in the chopped cilantro and lemon juice, adjusting seasoning with salt and pepper as needed.
- Serve warm, garnished with extra cilantro if desired.
