Ingredients
- Eggplant - 200 grams
- Tomatoes - 300 grams, diced
- Red bell pepper - 100 grams, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Vegetable broth - 500 milliliters
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F). Cut the eggplant in half lengthwise, brush with 1 tablespoon of olive oil, and place cut-side down on a baking sheet. Roast in the oven for about 20-25 minutes, or until soft and slightly charred.
- In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced tomatoes and red bell pepper to the pot, cooking for about 5 minutes until they soften.
- Remove the roasted eggplant from the oven and scoop out the flesh. Chop it into small pieces and add it to the pot.
- Stir in the cumin, paprika, salt, and black pepper. Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 10 minutes to allow the flavors to meld.
- Remove from heat and stir in the lemon juice and chopped cilantro. Adjust seasoning if necessary.
- Serve hot, garnished with additional cilantro if desired.
