Ingredients

  • Whole wheat pizza dough - 200 grams
  • Eggplant - 1 medium (approximately 250 grams)
  • Ripe tomatoes - 2 medium (approximately 300 grams)
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled
  • Black olives - 30 grams, sliced

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to fit a 12-inch pizza stone or baking tray.
  3. Slice the eggplant into small cubes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the eggplant and sauté for about 5 minutes until soft and slightly browned.
  5. Add the minced garlic, cumin, paprika, salt, and pepper to the skillet with the eggplant, and cook for another 2 minutes.
  6. Chop the tomatoes and add them to the skillet. Cook for about 5-7 minutes until the tomatoes break down into a sauce. Stir in the chopped parsley and remove from heat.
  7. Spread the zaalouk mixture evenly over the rolled-out pizza dough.
  8. Sprinkle crumbled feta cheese and sliced black olives on top of the zaalouk.
  9. Drizzle with the remaining olive oil and bake in the preheated oven for 15-20 minutes until the crust is golden and crispy.
  10. Remove from the oven, let it cool slightly, and slice into wedges before serving.
