Ingredients

  • Eggplant - 2 medium (about 400g)
  • Olive oil - 3 tablespoons
  • Tomatoes - 2 large, diced (about 300g)
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Chickpeas - 100g, cooked

Steps

  1. Preheat the grill to medium-high heat.
  2. Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
  3. Brush the cut sides of the eggplants with 1 tablespoon of olive oil and sprinkle with salt.
  4. Place the eggplants cut-side down on the grill and cook for about 10-15 minutes, until they are tender and have grill marks.
  5. In a skillet, heat the remaining olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  6. Add the diced tomatoes, cumin, paprika, coriander, salt, and black pepper to the skillet. Cook for about 10-15 minutes until the tomatoes break down and the sauce thickens.
  7. Stir in the cooked chickpeas and cook for an additional 5 minutes to heat through.
  8. Remove the eggplants from the grill and place them on a serving plate, cut-side up.
  9. Spoon the tomato and chickpea mixture over the grilled eggplants and garnish with chopped parsley.
