- Eggplant - 2 medium (about 400g)
- Olive oil - 3 tablespoons
- Tomatoes - 2 large, diced (about 300g)
- Garlic - 4 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Chickpeas - 100g, cooked
Steps
- Preheat the grill to medium-high heat.
- Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
- Brush the cut sides of the eggplants with 1 tablespoon of olive oil and sprinkle with salt.
- Place the eggplants cut-side down on the grill and cook for about 10-15 minutes, until they are tender and have grill marks.
- In a skillet, heat the remaining olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the diced tomatoes, cumin, paprika, coriander, salt, and black pepper to the skillet. Cook for about 10-15 minutes until the tomatoes break down and the sauce thickens.
- Stir in the cooked chickpeas and cook for an additional 5 minutes to heat through.
- Remove the eggplants from the grill and place them on a serving plate, cut-side up.
- Spoon the tomato and chickpea mixture over the grilled eggplants and garnish with chopped parsley.
