Ingredients

  • Ripe tomatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for about 15 minutes or until soft and slightly charred.
  3. While the tomatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Remove the roasted tomatoes from the oven and let them cool slightly. Once cool enough to handle, peel off the skins and chop the tomatoes into smaller pieces.
  5. Add the chopped tomatoes to the skillet with garlic. Stir in the ground cumin, paprika, and cayenne pepper. Cook for an additional 10 minutes, stirring occasionally, until the mixture thickens.
  6. Remove from heat and add freshly chopped parsley and lemon juice. Mix well and adjust seasoning if necessary.
  7. Serve warm with crusty bread or as a side dish.
