- Ripe tomatoes - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Cut the tomatoes in half and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast in the oven for about 15 minutes or until soft and slightly charred.
- While the tomatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Remove the roasted tomatoes from the oven and let them cool slightly. Once cool enough to handle, peel off the skins and chop the tomatoes into smaller pieces.
- Add the chopped tomatoes to the skillet with garlic. Stir in the ground cumin, paprika, and cayenne pepper. Cook for an additional 10 minutes, stirring occasionally, until the mixture thickens.
- Remove from heat and add freshly chopped parsley and lemon juice. Mix well and adjust seasoning if necessary.
- Serve warm with crusty bread or as a side dish.
